Brunch - Soy Meatball Sandwich w Lentil & Broccoli Soup --- Chocolate Soy Milk


Dinner - Brixx Vegan Pizza with soy cheese (didn't put enough soy cheese on and I would not go with the broccoli on the pizza next go round)


Late night snack - Kashi - Mayan Harvest Bake (Plantains,Black Beans, Sweet Potatoe & Kale over 7 grain pilaf) w/ Amaranth & polenta spicy Ancho sauce)

Update: LANDMARK!!!


This evening I had a meatball sub on wheat with fresh sliced jalapenos and BBQ sauce over the sub.

It was delicious and of course the kicker is it was VEGAN! Soy meat. If I was caught up in conversation while eating I would never know.

Got enough in the $4.99 bag to make 2 mo sandwiches!!!


PS....also, have a Red Lentil soup brewing in the old faithful again(crockpot)

Late post for 02/22/2010:

Woke up to a tall glass of Soy Milk and 2 Tablespoons or JIF natural Peanut Butter.

Dinner consisted of left overs from yesterday with 2-3 Tablespoons of Flax Seed Ground Mill. Just mixed in with the corn,peas,tofu,onions,garlic and Navy Beans (Beans are always eaten in most natural form ....and theat would be dry.....boiled for 10mins and then soaked overnight)

lots of water throughout the day and oj with calcium. Also, enjoyed 1 Pepsi and some coffee through out the day with a tad of sugar but not cream of course.

-All good. have dropped 10lbs I'm sure in the last 12 days. Still very surprised that I have had no MAJOR hunger pains or even terrible bad food cravings. I'm sure they will come though

Today I had the Vegan Crockpot Special.

Dry Navy beans, onions,garlic, Firm Tofu, Organic Corn, Organic Peas cooked on low 10hrs and poured over minute brown rice.

Little Bill's Vegan Food Blog 02/19/2010 Day 7

Tonight ate a Red Lentil Dal mild curry with cut up white potatoes,onions,garlic. Boiled the Red Lentils for 10mins after soaking overnight and then added all to the slow cooker(crockpot) and set on my favorite setting (10hrs low)

A funny thing happened with the red lentils being so small (like the size of BB's) and the white potatoes being cooked so long......THEY ALL TURNED TO MUSH and my Dal was like a yellow curry baby food. UM UMMMM it was so good.

SERVE: On top of a wheat or multi grain bread. Imagine the nutritional analysis here!


Quick Note*** I have noticed that my appetite is fine and I am already eating less. The spiritual axiom of being VEGAN is one of peace and fulfillment.

Eggplant Curry - Day 5 LittleVeganBill

Dinner was wheat couscous w/pine nuts along with Eggplant Curry.

eggplant,red pepper,tomatoes,onion,garlic,ginger, jalapeno/habanero peppers,cumin,coriander seed,hot madras curry powder.


Outcome: Good but too much of the spices of course!!! The story of my life! Learning from my mistakes, unfortunatley....LOL!

Dinner- "Kitchens of India", Red Kidney Bean Curry, 1 GP stoked with cornbread stuffing,onions,jalapenos,2 T sesame 0il,1 c water. Baked 425 75mins.

Served w/ 1 Cup Raw Spinach

Large Glass of Orange Gatorade w/crushed ice
